How much content am I missing by not crafting?

I'm new here, so I was navigating all the menus to see what was up and saw that there was crafting. I didn't realize however that you have to choose a profession before you can start crafting. I don't want to choose a profession right now since there doesn't seem to be any difference between any of them and I don't want to have to pay 3,000 feathers later (I also am not quite sure how valuable feathers are, but I'm typically the person that likes to hold onto my money). If there isn't a whole lot I'm missing out on then I can wait until there are differences between professions, so it's not a big deal!
